Breakfast: Avocado & Egg

I have been trying to reduce the amount of carbs in my diet, not cutting them out altogether but being aware of the amount in my diet. The hardest part has been breakfast – thinking of creative ways to cut out the bread. This morning, inspired by Nigella, I created Avocado and egg.


For a single serving:

  • 1/2 ripe avocado
  • 1/2 lime
  • Fresh dill
  • Pinch of salt
  • Egg

How to make it:

I used a food processor to blend up the avocado, but you can do it by hand. Add the avocado, juice of half a lime, a pinch of salt and the dill into the processor and blend a little. Don’t overdo it – its nice to have it a bit chunky rather than mousse like.

I used a couple of springs for the dill – it has an a aniseed taste to it, so if you’re not a big fan don’t over do it!

I fried up the egg in a tiny bit of olive oil and ta-da – all done. Quick, simple, easy and tastes very fresh for the morning. If you like a bit of heat you could always add some fresh chilli.
